Mexican Chilaquiles Rojos with Patatas Bravas

Ingredients for Chilaquiles

Ingredients

Red onion, diced small
1 Tbsp,
Cotija cheese
1 oz.
Cilantro, lightly chopped
1 Tbsp.
Chilaquiles rojos sauce
3/4 cup
Tortilla chips
1 cup

Directions

  1. Place tortilla chips on the bottom of the meal kit container.
  2. Drizzle rojos sauce evenly over the chips.
  3. Distribute the scrambled eggs throughout the container on top of sauced chips.
  4. Garnish with cheese, red onion and cilantro.

Ingredients for Patatas Bravas

Ingredients

Bravas sauce
1/4 cup
Salt and pepper
to taste
Fresh parsley, lightly chopped
garnish

Directions

  1. Heat frying oil to 350-375°F and fry the diced potatoes for approximately 3-5 minutes OR season the potatoes with salt and pepper and until nicely golden brown in a 375°F oven for approximately 20—25 minutes.
  2. Season potatoes liberally with salt and pepper if using the frying method.
  3. Top potatoes with bravas sauce.
  4. Garnish with chopped parsley.
