German Potato Salad
This classic German potato salad features red potatoes and thick cut bacon, mixed with mustard, apple cider vinegar and sugar.

Directions
- Boil potato in large pot of salted water until easily pierced.
- Drain water and return to pot to allow excess moisture to dry off.
- Cook bacon pieces in a large skillet over medium heat.
- Remove bacon from skillet and add diced onions into bacon fat.
- Cook for 5 minutes until nicely softened and golden brown.
- Remove from heat and add garlic, mustards, sugar, salt and pepper.
- Whisk until combined.
- Add apple cider vinegar and return to heat to reduce for 3-5 minutes.
- Add cooked potatoes, cooked bacon to warm dressing and gently toss to combine.
- Taste and adjust seasoning as necessary.
- Add chopped parsley just before serving.
