German Potato Salad

This classic German potato salad features red potatoes and thick cut bacon, mixed with mustard, apple cider vinegar and sugar.

Ingredients

Simply Potato Red Skin Diced
2 lb.
Thick Cut Bacon, Diced
1 lb.
Yellow Onion, Diced
1 large
Garlic, minced
3 cloves
Apple Cider Vinegar
3/4 cup(s)
Whole Grain Mustard
1 1/2 Tbsp.
Dijon Mustard
1 Tbsp.
Sugar, granulated
3 Tbsp.
Salt
½ tsp.
Black Pepper
¾ tsp.
Fresh Parsley, chopped
¼ cup

Directions

  1. Boil potato in large pot of salted water until easily pierced.
  2. Drain water and return to pot to allow excess moisture to dry off.
  3. Cook bacon pieces in a large skillet over medium heat.
  4. Remove bacon from skillet and add diced onions into bacon fat.
  5. Cook for 5 minutes until nicely softened and golden brown.
  6. Remove from heat and add garlic, mustards, sugar, salt and pepper.
  7. Whisk until combined.
  8. Add apple cider vinegar and return to heat to reduce for 3-5 minutes.
  9. Add cooked potatoes, cooked bacon to warm dressing and gently toss to combine.
  10. Taste and adjust seasoning as necessary.
  11. Add chopped parsley just before serving.
