Creamy Mexican Egg Dip with Chipotle Pub Chips

Homemade potato chips are paired with this irresistible dip which combines richness and zesty Mexican flavors to deliver a crowd-pleasing appetizer. Simply Potatoes® Sliced Potatoes are made from 100% real potatoes, and they arrive completely prepped, refrigerated, and ready to fry.

Directions

  1. Deep fry potato slices using the following method:
  2. Drain potatoes for 30 seconds.
  3. Deep fry 1 lb. per basket at 350°F for 5 minutes.

Creamy Mexican Dip

Ingredients

Mexican chorizo, medium-diced
2 oz.
olive oil
2 tsp.
Sour cream
¼ cup
Heavy cream
¼ cup
Red bell peppers, small-diced, sautéed
1 Tbsp.
Salt
to taste
Chipotle powder
to taste
Green onion, thinly sliced, divided
1
Chihuahua cheese
1½ Tbsp.
Cotija cheese
1½ Tbsp.

Directions

  1. In sauté pan over medium heat, cook chorizo 2-3 minutes, or until cooked through.
  2. Heat olive oil in sauté pan over low heat.
  3. In medium bowl, whisk together eggs, sour cream, heavy cream, red peppers, salt, chipotle powder and half the green onion slices.
  4. Add cheeses. Stir until melted.
  5. Add chorizo. Cook 1 minute, stirring constantly.
  6. Pour into bowl and top with remaining green onions. Serve with fried potato chips.
