- In a large mixing bowl, mix mashed potatoes with cream cheese, jalapeno peppers, bacon (optional), green onions and cheddar cheese.
- Roll mixture into 1 oz. balls.
- In another bowl, mix the hash brown, starch and salt and set aside.
- Prepare for 3 steps breading: place flour in 1 bowl, eggs in second bowl and hash brown mix in third bowl.
- Dread potato balls in flour, turning to coat all sides. Dip in egg wash. Finally roll potato ball in hash brown mix and use your hands to coat all sides evenly and make it firm.
- Refrigerated breaded potatoes balls for 2-3 hours or overnight.
- Fry potato balls in 350°F deep fryer for 3-5 minutes, or until golden brown
- Serve immediately.
