Loaded Cheesy Potato Soup

Loaded Cheesy Potato Soup

Ingredients

Bacon
6 slices
Yellow onion, chopped
1 large
Garlic chopped
6 cloves
Jalapeno
1 large
Butter, if bacon does not yield enough rendered fat
2 Tbsp.
Flour
3 Tbsp.
Chicken stock
4 cups
Milk
1 cup
Heavy cream
1 cup
Cream cheese
8 oz.
Cheddar cheese
8 oz.
Green onions
for garnish
Salt and pepper
to taste

Directions

  1. Cook the bacon in a large dutch oven over medium heat until crisp, about 5 minutes. Remove and reserve.
  2. Add the onion to bacon fat and cook 5 minutes, until slightly tender. Add the garlic.
  3. Stir in the butter and flour, cook for 2-3 minutes. Slowly stir in stock, making sure to incorporate fully before adding more.
  4. Add diced potatoes and mashed potatoes. Partially cover and simmer over medium heat for 15-20 minutes, until the potatoes are tender.
  5. Stir in the milk, cream, cream cheese, and cheddar cheese. Cook 5-10 minutes, until the cheese is melted.. If needed, thin with additional stock or milk.
  6. Adjust seasoning.
  7. Garnish with cooked bacon and green onions.
