- Cook the bacon in a large dutch oven over medium heat until crisp, about 5 minutes. Remove and reserve.
- Add the onion to bacon fat and cook 5 minutes, until slightly tender. Add the garlic.
- Stir in the butter and flour, cook for 2-3 minutes. Slowly stir in stock, making sure to incorporate fully before adding more.
- Add diced potatoes and mashed potatoes. Partially cover and simmer over medium heat for 15-20 minutes, until the potatoes are tender.
- Stir in the milk, cream, cream cheese, and cheddar cheese. Cook 5-10 minutes, until the cheese is melted.. If needed, thin with additional stock or milk.
- Adjust seasoning.
- Garnish with cooked bacon and green onions.
