Loaded Cheesy Potato Soup

Really load up the potato flavor in this Loaded Cheesy Potato Soup! Start with the bacon, onion and garlic then add refrigerated mashed for extra potato goodness. Finish with lots of dairy including milk, heavy cream, cream cheese and cheddar cheese to make this potato forward classic!

Ingredients

Bacon
6 slices
Yellow onion, chopped
1 large
Garlic chopped
6 cloves
Jalapeno
1 large
Butter, if bacon does not yield enough rendered fat
2 Tbsp.
Flour
3 Tbsp.
Chicken stock
4 cups
Milk
1 cup
Heavy cream
1 cup
Cream cheese
8 oz.
Cheddar cheese
8 oz.
Green onions
for garnish
Salt and pepper
to taste

Directions

  1. Cook the bacon in a large dutch oven over medium heat until crisp, about 5 minutes. Remove and reserve.
  2. Add the onion to bacon fat and cook 5 minutes, until slightly tender. Add the garlic.
  3. Stir in the butter and flour, cook for 2-3 minutes. Slowly stir in stock, making sure to incorporate fully before adding more.
  4. Add diced potatoes and mashed potatoes. Partially cover and simmer over medium heat for 15-20 minutes, until the potatoes are tender.
  5. Stir in the milk, cream, cream cheese, and cheddar cheese. Cook 5-10 minutes, until the cheese is melted.. If needed, thin with additional stock or milk.
  6. Adjust seasoning.
  7. Garnish with cooked bacon and green onions.
