- To chop eggs easily, place cooling rack over the top of a bowl.
- Press hard cooked through the cooling rack grates to the bowl below.
- In a food processor or blender, place chipotle chilis, cilantro, mayonnaise, buttermilk, cumin, garlic powder, oregano, and salt to a smooth consistency.
- Fold dressing mixture gently together with chopped eggs and lime treated diced avocados.
- Taste and adjust seasoning with more salt, garlic, cumin or cilantro.
- Serve in or on your preferred carrier.
