- Preheat oven to 375°F. Combine salsa, corn, and greens in a baking pan and create a slight depression with the back of a spoon for each serving. Crack one egg on top of salsa into each depression. Bake until whites are just set and yolks are still runny, about 20 minutes.
- Meanwhile, heat up beans and warm tortillas. Serve baked huevos rancheros on 2 tortillas smeared with 1/3 cup beans and topped with desired garnishes. Serve immediately.
