Tzatziki Potato Salad

This Greek inspired side combines potato wedges, yogurt and chopped mint and dill for a unique side that goes with any protein.

  1. In a large bowl whisk together Yogurt, Mayonnaise, Garlic Powder and add Simply Potatoes Red Skin Wedges (cooked) and Cucumbers.
  2. Stir in Mint and Dill and season with Salt and Pepper.  Garnish with Lemon Zest.
  3. Serve Chilled.
