Stuffed Carnitas Nachos

Flour tortillas stuffed with eggs, black beans and pork carnitas

  1. Spread ¼ tsp. mayonnaise in thin layer on 1 tortilla.
  2. Place tortilla in sauté pan, mayonnaise side down.
  3. Sprinkle shredded cheese on tortilla. Top with scrambled eggs. Add refried beans.
  4. Add carnitas and cilantro.
  5. Cover with remaining tortilla.
  6. Spread remaining ¼ tsp. mayonnaise on top of tortilla.
  7. Over medium heat, cook until browned on both sides.
  8. Remove from pan. Cut into 8 equal wedges.
  9. Garnish with pico de gallo. Add a dollop of sour cream or drizzle on top. Serve 4 wedges on plate.
