Southwest Egg Salad Melt
A southwest egg salad melt with hard cooked egg, black beans, corn, pepper jack cheese on sourdough bread.
- Dice eggs and toss with black beans, corn, red pepper and cilantro in bowl. Mix in mayonnaise and season with salt and pepper.
- Place 1 slice of cheese on the bottom slice of bread. Top with egg salad, remaining cheese and bread slice.
- Grill sandwich on 350º F flattop grill until golden brown and cheese is melted. Serve immediately.
