Roasted Beet Salad

Arugula salad topped with fried egg patties, beets and gorgonzola

  1. Place beets in pan and bake at 350ºF for 1 hour or until tender, peel and slice.
  2. Heat egg patties and place on arugula.
  3. Top with sliced beets, Gorgonzola, vinaigrette on the side.

  • Serve with: marinated strawberries or herbed bread slices

  • Daypart suggestion: add sliced steak to make a lunch entrée
