Pesto Egg Panini
A panini with pesto, egg and fresh mozzarella.
- Preheat panini press.
- Spread pesto evenly on insides of bread slices.
- Place mozzarella over pesto on bottom slice.
- Top mozzarella with heated egg patty and tomato slices.
- Drizzle olive oil over tomato. Add salt and pepper to taste.
- Top sandwich with second slice of bread.
- Place sandwich in hot panini press. Toast until bread is golden brown and cheese is melted. Remove from press.
- Serve immediately.
For additional flavor, brush the outside of the bread with pesto before toasting
