Pesto Egg Panini

A panini with pesto, egg and fresh mozzarella.

  1. Preheat panini press.
  2. Spread pesto evenly on insides of bread slices.
  3. Place mozzarella over pesto on bottom slice.
  4. Top mozzarella with heated egg patty and tomato slices.
  5. Drizzle olive oil over tomato. Add salt and pepper to taste.
  6. Top sandwich with second slice of bread.
  7. Place sandwich in hot panini press. Toast until bread is golden brown and cheese is melted. Remove from press.
  8. Serve immediately.

  • For additional flavor, brush the outside of the bread with pesto before toasting

  • For another version, add sliced turkey
