Market Omelet Bowl

A protein packed breakfast bowl with a home-style egg white omelete, wheat berries and fresh vegetables.

  1. In a sauté pan over high heat, add the oil and the kale. Sauté until tender, about 3 minutes.
  2. In a bowl, combine the kale, wheat berries, cherry tomatoes, zucchini, and squash. Add the vinaigrette and toss to evenly coat.
  3. Place each heated omelet in a serving bowl. Divide the salad between the 8 omelet bowls. Serve warm.

  • Amp up the flavor with sautéed mushrooms and garlic.
