Egg & Kale Couscous Salad

A filling and healthy salad with kale, couscous and egg.

  1. In medium bowl, combine vinegar, lemon juice, mustard, honey and thyme.
  2. Gradually add olive oil, whisking constantly. Reserve vinaigrette.
  3. In large bowl, combine scrambled eggs, couscous, kale, raisins, feta and almonds.
  4. Toss salad with vinaigrette dressing.

  • Serve over toasted ciabatta or in a bread bowl
  • For a heartier version, add garbanzo beans
