Egg & Kale Couscous Salad
A filling and healthy salad with kale, couscous and egg.
- In medium bowl, combine vinegar, lemon juice, mustard, honey and thyme.
- Gradually add olive oil, whisking constantly. Reserve vinaigrette.
- In large bowl, combine scrambled eggs, couscous, kale, raisins, feta and almonds.
- Toss salad with vinaigrette dressing.
- Serve over toasted ciabatta or in a bread bowl
- For a heartier version, add garbanzo beans
