Colcannon
This mashed potato is dressed up with a creamy base, freshly sautéed kale and warm, roasted corn.
- Heat mashed potatoes.
- In large bowl, combine mashed potatoes, corn kernels, sautéed kale, cream, butter and salt.
- Mix well and serve immediately.
- For a Southern variation, serve with white gravy.
