Build-Your-Own Breakfast Bowl

Build-your-own breakfast with this south of the border inspiration.

  1. In a pan over medium high heat, heat olive oil and saut√© Simply Potatoes Diced Potatoes per instructions until golden.  Season with salt and pepper.
  2. Combine diced onions, ½ of cilantro and the juice from 1 lime and set aside.
  3. In a serving bowl scoop 4 oz Simply Potatoes Diced Potatoes, 4 oz Papetti’s Scrambled Eggs and 2oz Chorizo (or meat of choice).
  4. Top each with 2 oz Tomato Salsa, Cheddar Cheese, Diced Tomatoes, Onion & Cilantro Lime mixture and garnish with sliced Jalapenos.

  • In addition to meat substitutes, consider offering alternate salsa and cheese options for additional customization potential.
