A vegetarian spin on a Greek classic - an egg white patty with vegetable inclusions, eggplant, red onion and tzatziki sauce
- Preheat grill on high.
- Lightly toast pita on grill.
- Layer heated egg patty halves on one side of toasted pita.
- Add grilled eggplant and fried potatoes.
- Top with onions and tomato.
- Drizzle tzatziki sauce over vegetables.
- Fold over and serve immediately.
- Serve with Greek salad
