Vegetarian Greek Egg Pita

A vegetarian spin on a Greek classic - an egg white patty with vegetable inclusions, eggplant, red onion and tzatziki sauce

  1. Preheat grill on high.
  2. Lightly toast pita on grill.
  3. Layer heated egg patty halves on one side of toasted pita.
  4. Add grilled eggplant and fried potatoes.
  5. Top with onions and tomato.
  6. Drizzle tzatziki sauce over vegetables.
  7. Fold over and serve immediately.
