Tzatziki Potato Salad
This Greek inspired side combines potato wedges, yogurt and chopped mint and dill for a unique side that goes with any protein.
- In a large bowl whisk together Yogurt, Mayonnaise, Garlic Powder and add Simply Potatoes Red Skin Wedges (cooked) and Cucumbers.
- Stir in Mint and Dill and season with Salt and Pepper. Garnish with Lemon Zest.
