Sweet Potato Bisque
This creamy bisque is loaded with mashed sweet potatoes and aromatic spices.
- In hot stockpot, add oil, onion and garlic. Cook until onions are lightly caramelized.
- Add chicken broth, sweet potatoes and seasonings. Simmer 20 minutes.
- With hand mixer, purée bisque until smooth.
- Add heavy cream. Simmer another 20 minutes.
- Serve hot. Garnish with salsa.
- Serve with 3-cheese grilled cheese sandwich
