Root Veg Mashed Potatoes

This healthier mashed option has mashed turnips, parsnips and celery mixed in.

  1. In small pan, combine butter, cream and nutmeg. Heat over low heat for 10 minutes. Stir occasionally. Do not boil.
  2. In large baking dish, combine mashed potatoes, turnips, parsnips, and celeriac.
  3. Cooked mashed potato mixture using preferred method.
  4. Using paddle attachment, mix potato mixture on low speed. Slowly pour hot cream and butter mixture into potato mixture until combined. Remove bowl from mixer.
  5. Remove bowl from mixer.
  6. Adjust seasoning as needed.
