Colcannon

This mashed potato is dressed up with a creamy base, freshly sautéed kale and warm, roasted corn.

  1. Heat mashed potatoes.
  2. In large bowl, combine mashed potatoes, corn kernels, sautéed kale, cream, butter and salt.
  3. Mix well and serve immediately.

  • For a Southern variation, serve with white gravy.
  • Substitute kale with greens of your choice.
  • Use any Simply Potatoes® mashed variety with this recipe.
