- In a pan over medium high heat, heat olive oil and sauté Simply Potatoes Diced Potatoes per instructions until golden. Season with salt and pepper.
- Combine diced onions, ½ of cilantro and the juice from 1 lime and set aside.
- In a serving bowl scoop 4 oz Simply Potatoes Diced Potatoes, 4 oz Papetti’s Scrambled Eggs and 2oz Chorizo (or meat of choice).
- Top each with 2 oz Tomato Salsa, Cheddar Cheese, Diced Tomatoes, Onion & Cilantro Lime mixture and garnish with sliced Jalapenos.
- In addition to meat substitutes, consider offering alternate salsa and cheese options for additional customization potential.
