Baked Huevos Rancheros

Our baked huevos rancheros quantity recipe gives your foodservice guests a different take on a classic Mexican dish.

  1. Preheat oven to 375°F. Combine salsa, corn, and greens in a baking pan and create a slight depression with the back of a spoon for each serving. Crack one egg on top of salsa into each depression. Bake until whites are just set and yolks are still runny, about 20 minutes.
  2. Meanwhile, heat up beans and warm tortillas. Serve baked huevos rancheros on 2 tortillas smeared with 1/3 cup beans and topped with desired garnishes. Serve immediately.
